Product Grades and Options

 

Grading for Fish & Squid

  • Grade A+: Size med or large (see size chart), bled, killed, iced in saltwater slurry.

  • Grade A: Size large, bled, iced in saltwater slurry.

  • Grade B: Size med, bled, iced in saltwater slurry.

  • Grade C: Size small, iced in salt water slurry.

Product Form Options

  • Whole (round) fish: All parts, internal and external, are intact (Code: 1)

  • Dressed, head off: The head, gills, and internal organs are removed; Squid are cleaned with skin, fins, and internal organs removed. (Code: 2)

  • Dressed, head on: The head remains intact, while the internal organs are removed. The gills may be removed. (Code: 3)

  • Tail only (applies to monkfish): The head and all internal organs are removed. The skin remains intact. (Code: 4)
